If you have mastered the art of home cooking and prefer to entertain at home, the culinary masterminds at SMC have provided a decadent recipe to help bring the finest Italian flavours to your own kitchen.
150g fresh egg Pappardelle pasta
1 clove of Garlic
25g burnt butter
100g grated grana Padano cheese
A drizzle of truffle olive oil
Fresh shaved black truffle
Boil salted water on the stove and add pasta.
While pasta is cooking add truffle olive oil, butter and garlic to a pan over medium heat.
Cook until butter is golden then take the garlic cloves out of the pan.
Add a couple of tablespoons of the pasta water to the pan, this will react with the truffle oil and butter creating a nice creamy sauce.
Add the drained, cooked pasta to the pan with a pinch of salt and stir into the sauce for a minute or so.
Take the pan off the heat and add the Padano cheese, continuing to stir.
If the sauce is too thick add a few more tablespoons of pasta water.
Finish with fresh truffle shaved on top.
Serve immediately and enjoy the flavours of Italy!
